Ingredients

10 eggs
1 box mushrooms
1.5 tbsp butter
16 oz frozen spinach
4 oz. medium cheddar
salt and pepper
Directions
1. preheat oven to 350 degrees
2. saute mushrooms in 1 tbsp butter with salt and pepper
3. defrost spinach and drain as thoroughly as possible
4. mix spinach and mushrooms, season with salt and pepper to taste
5. beat the eggs in a clean bowl, mix in spinach and mushrooms
6. lightly grease silicone muffin tray with remaining butter
7. distribute mixture evenly -- cups will be slightly less than half full.
8. bake approximately 25 minutes, until eggs appear cooked.
9. remove from oven, and remove muffins from cups
10. immediately top with shredded or thinly sliced cheese
