Introduction

Ingredients

    1 3/4 c Whole Wheat Flour
    1 T Baking Powder
    2 large Eggs, separated
    1/2 c Canola Oil (or any cooking oil will do)
    1 3/4 c Milk (recipe calc is for Whole Milk)
    1/4 t Kosher Salt
    1/4 t Cream of Tartar

Directions

Mix Flour, Baking Powder and Salt in a large bowl ( I use one with a lid for putting the mix away in the fridge) In two bowls separate eggs and whip Egg Whites with Cream of Tartar until stiff peaks. Lightly beat Egg Yolks and add Oil and Milk. Make a well in dry ingredients and add Egg Yolk mixture, stir only ten times. Spoon Egg Whites onto mixture and fold in lightly about 4 folds. There will still be some lumps. Let rest for 3 minutes and spoon 1/2 c batter onto hot waffle iron set to crispy ext/moist int setting at your browning preference. Makes 6-7 waffles.
