Introduction

Ingredients

    2 lbs. Italian seasoned ground turkey
    1 tsp. salt
    1 tsp. ground black pepper
    2 T. basil
    2 T. oregano
    1 tsp. minced garlic
    32 oz (3 cups) no salt added tomato sauce
    3 cups fat free cottage cheese
    4 egg whites
    1 cup (48 tsp) parmesan cheese
    3 cups fat free mozzarella cheese, shredded
    2 cups mushrooms, sliced and sauteed
    6 oz. healthy harvest whole wheat lasagna noodles, cooked and drained
    2 medium sized zuchinni, sliced lengthwise

Directions

Brown meat, add spices, garlic, onions and mushrooms. Add tomato sauce and parmesan and set aside. In a separate bowl, fold together the egg whites and cottage cheese. Use 1 large pan (9X13) or 2 smaller pans. Brush bottom and sides of pan with olive oil. Place 3-4 noodles in the bottom of pan, then place 1/3 of the meat mixture on top. Next layer 1 cup of mozzarella cheese, then half of the cottage cheese mixture. Layer the zuchinni next, followed by 1/3 of the meat mixture, 1 cup of the mozzarella, and the rest of the cottage cheese mixture. Finish off with the remaining noodles, the last of the meat mixture and top with 1 cup of the mozzarella cheese. Bake at 350 degrees for 1 hour. Let lasagna sit for 15 minutes before serving.
