Introduction

This is a quick sandwich that is nutritious and flavourful. Use leftover roasted or deli chicken. Make it your own by adding whatever you like in chicken salad. Sometimes I add some finely chopped onion and celery. I don't find a need for margarine or mayo on the bread. This is a quick sandwich that is nutritious and flavourful. Ingredients

    6 oz. Roasted Chicken
    2 tblsp. low fat mayo
    1 tblsp sweet green relish
    salt and pepper to taste

Directions

Chop up the chicken in small pieces.
Add the mayo and relish and mix.
If you are adding onions or celery now is the time.
Salt and pepper to taste.
Serve as is or place on your favorite bread or open-faced bun.
