Ingredients

    *Ramen Noodle - Plain, 1 block, 1 serving
    Egg, fresh, 2 large
    Mixed Vegetables, frozen, 1 cup
    Broccoli, fresh, .5 cup, chopped
    Plum Sauce, 4 tbsp
    Jalapeno Peppers, 1 pepper
    Pinto beans, 1.5 cup - drained and rinsed very well.

Directions

Boil noodles, drain, set aside. Spray a large wok or skillet with cooking spray. Add vegetables and cook on high until they just start turning bright. Drain pan if there is excess water from the veggies. Add beans and stir. Move mixture over to one side of the pan and crack the 2 eggs and add to the cleared area. Allow eggs to cook almost fully, then stir in with the rest of the ingredients. Turn heat off and stir in plum sauce. Enjoy.
