Introduction

Super creamy pasta dish with chicken - tastes like comfort food, but light on calories.

Works well as a main dish with a salad - or without for a quick meal.

Ingredients

    - 250 g Lean Ground Chicken breast

    - 1/3 cup light cream cheese

    - 4 tbsp grated Parmesan (or shredded)

    - Tri-colored Rotini (2.5 cups cooked)

    -1/4 cup fat free milk

    - 1/4 or more Frozen Peas and 1/2 cup or more frozen Corn

    - salt and oregano

Directions

Cook pasta according to instructions on package, about 3 handfuls. Also add corn to water along with pasta.

In a large pan cook chicken with some oil (not included in calories), water or broth. Sprinkle with some oregano.

When pasta is done, drain and add to pan when chicken is done (no more pink). Cook chicken to your liking, slightly browned or just cooked through.

Add milk, peas and cream cheese in dollops and stir in over low heat until well blended. Then sprinkle with parmesan and stir just a bit more to mix it in. DONE
