Ingredients

    3 1/2 Cup Whole Wheat Flour
    1/2 Cup Unpacked Brown Sugar
    1/2 Cup Honey
    2/3 Cup Applesauce
    3 T Melted Butter
    2 Teaspoon Vanilla Extract
    4 Eggs
    7-9 Mashed Bananas (Overly Ripe Works Best)
    1 teaspoon Salt
    2 teaspoon Baking Soda
    1/2 Cup Hot Water

    Optional*:
    Dark Chocolate
    Nuts (Pecans or Walnuts)

Directions

1. Preheat oven to 325 degrees F (165 degrees C).

2. In a large bowl, beat applesauce, melted butter,and honey together. Add eggs, and mix well. Stir in bananas and vanilla. Stir in flour and salt. Add baking soda to hot water, stir to mix, and then add to batter. Spread batter into a greased 9x5 inch loaf pan.

3. Bake for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing.

It made 2 medium loaves along with 7 muffins for me. Skip the muffins for larger loaves.
