Introduction

This is my son's recipe. He wanted to make dahl one day, and looked around online for a recipe. He found one, and adapted it to come up with this. His Indian roommate said it was very good. I agree!
And I always double the recipe. If I don't, my husband will eat all the leftovers and I won't get any. NOTE: Keep in mind that the sodium in this recipe is through the roof. I haven't tried to lower it--maybe you can!

Ingredients

    1 t. olive oil
    1 large onion, chopped
    1/2 cup red lentils
    1 t. salt
    1 clove (or more) garlic, chopped
    1/2 t. cumin seed
    1/4 t. coriander seed
    1/4 t. turmeric
    1/2 t. cayenne pepper
    1/4 - 1/2 t. ginger paste
    1/8 t. hot pepper sauce (I used a squirt from a packet of mild taco sauce from Taco Bell!)
    1 t. ketchup or tomato sauce (I've used chopped tomatoes, too--about a half tomato or so)
    2 - 4 cups water

Tips

I usually add vegetables to the dahl while it is cooking, adding the vegetables that take longer to cook, such as carrots and potatoes first, then adding vegetables such as broccoli or cauliflower later.


Directions

Saute the chopped onion in the olive oil until translucent. Add the garlic, then the cumin and coriander seeds and cook until the seeds begin to pop. Add the rest of the ingredients and add the rest of the and cook until the lentils are soft, about 20 minutes. It may be a bit soupy. You can let it cook down a bit, or use a little less water at first.

However, if you're really feeling lazy, put everything in the pot and cook it. Make sure the water level doesn't get too low.

Serve with rice.

Makes 2 very generous servings.
