Ingredients

    *Flour, white, 2.25 cup
    Baking Powder, 1 tsp
    Baking Soda, .5 tsp
    Salt, .25 tsp
    Granulated Sugar, .66 cup
    Egg, fresh, 3 large
    Honey, 3 tbsp
    Vanilla Extract, .5 tsp

Directions

Line a baking sheet with parchment and preheat oven to 350 degrees. Whisk dry ingredients together. In a large bowl whisk together sugar and eggs, then add lavender, honey and vanilla. Stir in the dry ingredients until just combined. Form into two foot long logs right on the baking sheet. Bake for 30 minutes until the loaves are golden brown and cracked on top. Cool the logs about 15 minutes. Using a serrated knife, slice on the diagonal into 1/2 inch slices. Place the slices, cut side down back, on the baking sheet and bake about 10 minutes or until the cookie is golden and crispy on top. Flip the cookies and bake the other side another 10 minutes until it is golden and crispy. Cool on a wire rack.
These will keep a couple of weeks in an airtight container but also freeze well.
