Ingredients

    Saute or boil 3 cups fresh baby spinach in pan for about 5 minutes until tender. Drain and add to blender or food processor. Then add blueberries, 1 tsp lemon juice and 2 tbls water and puree mixture. Add 3/4 cups of this puree to all other ingredients and mix until well blended. The 19 dry servings are actually just 1 brownie mix box with 1/4 cup of mix discarded and replaced with the wheat germ. I use 3 egg whites, but 2 whole eggs can be used as well. The original recipe calls for 1/4 canola, but I fill half the 1/4 measuring cup with applesauce and the rest with canola to cut down on the calories. Pour mixture into prepared pan ( I use Pam) and bake at 350 for approx. 20-25 minutes.
