Introduction

Chicken with a little zing to it. Chicken with a little zing to it.

Ingredients

    • 4 boneless, skinless chicken breasts
    • 2 teaspoons dried basil leaves
    • 2 tablespoons chopped fresh parsley
    • 2 tablespoons lemon juice
    • 2 teaspoons olive oil
    • 1/2 teaspoon salt
    • 1 garlic clove, finely chopped

Directions

1. Remove fat from chicken.

2. Make lemon sauce: Beat remaining ingredients in a medium-sized bowl with a whisk or fork.

3. Spray a 10-inch skillet with cooking spray and cook chicken over medium-high heat for about 15 minutes or until juices are no longer pink when thickest part of chicken is cut.

4. Spoon some lemon sauce over chicken, turn chicken over and cook for an additional 15-20 seconds. Serve chicken topped with remainder of sauce.

Serves 4.

    Really have used this recipe for different occasions and even at church gatherings and every one wants the recipe my mom dont like chicken but when I make this dish she likes it I love chicken myself thank you for a great dish - 6/17/08

    My whole family loved this checken, including my 3 yo and my 1 yo twins. I did cook it in more lemon juice and added a little pepper to it, but it was delicious. - 6/9/08

    Very easy and great taste. I seasoned the chicken with sea salt & garlic and lemon pepper before cooking the chicken. - 6/18/08
