An easy, low-fat favorite! An easy, low-fat favorite!
Number of Servings: 24

Ingredients

    One box of Spice Cake mix
    One can (15 oz) pure pumpkin
    pecan halves (optional)

Directions

Preheat oven to 350 degrees. Lightly spray cookie sheet or jelly roll pan with cooking oil (ie., Pam).

Put cake mix and pumpkin in a mixing bowl and beat until blended. Spoon onto baking sheet. Top with a pecan half (or not). Bake for 10-12 minutes. Longer bake times yield crunchier results.

    These are amazing... so moist. I replaced the pecan's with chocolate chips and added a dash of pumpkin pie spice and cinnamon! - 11/15/08

    I have made these many times since getting the recipe from a friend a few years ago. I have not met anyone who didn't love them! When I make these large enough to only have 24, usually it takes 20 minutes to bake through and not be mushy. - 8/25/11

    Very Good
    These are like pumpkin bread in cookie portions. They don't change shape at all when you cook them. So don't worry about them running into each other as they cook, but do make them as close to what you want them to be as you can. The dough's kind of sticky, so you won't be able to make them perfect - 10/20/09

    I made these cookies today, and the info on here is a little off. It's more like 20 minutes bake time for a perfect consistency. I also mixed about 1/2 cup water. How do you get the number of calories/serving? I don't know how to measure the calories on the box of cake mix. Can anyone help? - 9/25/09
