Introduction

I made this with leftovers, not realizing that I'd created a tasty Vegan dish. And it's not really a casserole as you don't have to bake it (but you could). Ingredients

    1 Box Near East Tomato Lentil Couscous, prepared as directed (using olive oil)
    8 oz Firm Tofu
    1.5 C Fresh Broccoli Florets
    1 Jar Del Monte Garden Select Petite Diced Tomatoes (or, 1.75 oz canned diced tomatoes)
    10 Jumbo Pitted Black Olives
    1/2 tsp each Oregano, Savory, Marjoram, Thyme and Rosemary (or, 1 Rounded Tbls Herbs de Provence)
    Fresh Ground Black Pepper, to taste

Directions

Prepare Couscous in a larger sauce pan than suggested on the box and set aside. Dice olives and tofu into small pieces, trim stalks off broccoli. Drain tomatoes. Add all ingredients to pan and stir to mix well and distribute spices evenly.
