Ingredients

    4 c. green cabbage, shredded (approx. 1 head)
    3 c. red cabbage, shredded (approx. 1/2 head)
    1 c. carrots, shredded
    2 tbsp cilantro, chopped
    1/3 c. smooth peanut butter
    1/3 c. light coconut milk
    1/3 c. honey
    1 tbsp rice vinegar
    1-2 tsp of ginger, to taste
    salt, to taste

Directions

Shred cabbage and carrots and mix into large bow. Add chopped cilantro and toss. In a small bowl, whip peanut butter, coconut milk, honey, vinegar, ginger and spices. Pour over cabbage mix and mix thoroughly. Chill for at least 2 hours and serve.
