Introduction

Number of Servings: 8

Ingredients

    3.5 cups of cooked pearled barley, chilled
    .5 cup of chopped purple onion
    3.5 cups of green beans, chopped, tops and tails removed
    1 large tomato, de-seeded and rough chopped

    For vinaigrette:

    3 tbsp of olive oil
    1 tbsp of dijon mustard
    .5 tbsp of red wine vinegar
    dried or fresh parsley to taste
    salt & pepper to taste

Directions

Most of the work on this salad is prep. Cook the barley per package instructions, then rinse in cool water and let drain. Chop all your veggies.

In a small bowl, whisk together all the ingredients for the vinaigrette.

Toss barley, veggies and dressing and let chill for 30 minutes before serving.
