Ingredients

1 lb of chicken breast, cut in to chunks
1 cup of diced carrots
1 can of sweet yellow corn
3 medium to large potatoes, peeled and diced
2 boxes of Zatarain’s Yellow Rice
Directions
1. Cut chicken breasts into small strips or cubes. Fry with olive oil in a small/med frying pan.
2. In a large pot prepare the Yellow Rice per the instructions on the box.
3. Peel the potatoes and cut into bite size cubes. Place in the Yellow Rice (right away, don't wait for it to finish otherwise the potatoes won't cook enough).
4. Peel and cut potatoes into slices, also place in the large pot.
5. Add chicken last and cover. Cook as required by the instructions. You may need to addd a little bit of water (1/2 - 1 cup) as the potatoes and carrots will absorb some of it.
Serving Size: 8 servings
