Number of Servings: 4

Ingredients

    2 Large Ripe Tomatoes peeled & diced
    1 Small Red Onion minced
    1 Garlic Clove minced or pressed
    1 oz or 1 Jalapeno minced
    1 tbsp Cilantro
    1 tbsp White Wine Vinegar
    15 Greek olives sliced
    3 oz reduced fat Feta Cheese Crumbles
    3 servings Israeli Couscous


Directions

Prep vegetables. Peel & Dice tomatoes, removing seeds. Mince garlic, onion & jalapeno. Slice olives. Combine in medium sized bowl, add cilantro and white wine vinegar. Set aside.

Prepare Israeli Couscous to package directions. Strain and run under cold water until couscous is cool to the touch. Add to to Vegetable bowl. Sprinkle in Feta Cheese.
