Ingredients

    I medium eggplant
    1 clove garlic
    1 med onion
    1 15oz can Hunts diced tomatoes w/green chilis
    1 28oz can Hunts diced tomatoes
    2 cans Ortega green chilis
    2 c black beans cooked
    1/3 c reduced fat sour creme
    Olive Oil, 3 tbsp
    1 1/2 pkg Taco seasoning

Directions

Saute garlic and onion in olive oil.
Add Eggplant and cook till tender.. 5-8 min
Add tomatoes, green chilis, cooked black beans & Taco seasoning. Stir and simmer for 15 min.
Stir in sour creme right before serving
