Introduction

An easy, flavorful salsa that's both healthy and pretty. An easy, flavorful salsa that's both healthy and pretty.
Number of Servings: 11

Ingredients

    1 can of whole kernel corn
    1 can of Goya organic black beans
    1/4 of a large red onion
    1 medium tomato
    1 jalapeno pepper
    2 limes, juiced
    1 bell pepper
    1 medium avocado
    salt, to taste
    fresh ground black pepper, to taste
    cilantro (optional)

Directions

Dice up all of the raw vegetables and mix with the canned corn and black beans. Juice both limes and mix everything together. Add salt and pepper to taste, as well as cilantro.

Eat by itself, or on top of a salad in lieu of dressing. Also great on tacos or as the filling in a quesadilla. Enjoy! :)
