Introduction

Refreshing salad that can be served warm or cold. Refreshing salad that can be served warm or cold.
Number of Servings: 8

Ingredients

    3 cups water
    3 chicken bouillon cubes
    cup pearled barley
    1 12 oz can black beans, rinsed and drained
    1 green bell pepper, chopped
    1 red bell pepper, chopped
    1 clove garlic, finely chopped
    1 cup frozen or canned (drained) corn
    cup red onion, chopped
    cup cilantro, finely chopped
    cup salsa or picante sauce
    2 tbsp lemon or lime juice
    3 tbsp light sour cream

Directions

Add bouillon cubes to water and bring to a boil. Stir in barley, and simmer for 45 minutes. Drain barley, set aside and let cool. In a large bowl, mix peppers, onions, garlic, beans, corn and cilantro. Add cooled barley. Just before serving, blend in lemon/lime juice, salsa and sour cream. Serve cold or warm as a salad, or in tortillas or pita pockets.
