Introduction

I had a lot of leftovers and these are Really healthy and low sugar. I had a lot of leftovers and these are Really healthy and low sugar.
Number of Servings: 6

Ingredients

    1/3 uncooked Quinoa
    1 tbsp olive oil
    1 c fresh spinach
    1/2 c fat free refried beans
    2 large egg whites
    1 large egg
    1/4 of a large onion chopped
    1/4 cup of oatmeal
    1/4 c fresh cilantro chopped
    4 oz leftover steak
    1/2 large red pepper chopped
    1/2 c fat free mozzarella
    salt, pepper, garlic powder and red pepper flakes to taste.

Directions

I usually do most of my cooking for the week on Sunday so these can be frozen and reheated later. They are very filling and very healthy. Feel free to substitute any veggies or meat you like or have on hand. This is my first recipe on here.

preheat oven to 350

step 1.
Cook Quinoa as instructed on package (basically 1 part quinoa 2 parts water and boil for 15-17 min)

Step 2.
Saute onions in the olive oil until they start to turn gold. Add Spinach, beans, red pepper and spices (salt, pepper, ect.)
cook until the fresh spinach starts to wilt.

Step 3.
In a separate bowl, beat eggs and egg whites. Add cilantro, cheese and oatmeal and stir until blended, then add the leftover meat.

Step 4.
add the spinach and onion mixture to the bowl and stir. Drop by the spoonful into a mini muffin tin and bake for 20-25 minutes.

Serving Size: makes 6 servings
