My own take of Sante Fe Cheesey Rice and Beans My own take of Sante Fe Cheesey Rice and Beans
Number of Servings: 6

Ingredients

    3 cups of Brown Rice
    2 cups of Pinto Beans
    1 cup of tomatoes
    1 can of sweet corn

    Topping with sour cream and cheese

Directions

Prepare the rice in the juice from the beans as well as the can of tomatoes (Plus the rest water) Then when rice is done cooking dump in the cans of beans, tomatoes, corn mix and put aways.... or serve right away with sour cream and cheese on the side.

Serving Size: Makes approx 6 one cup servings
