Ingredients

2 c Water
1 16 oz can petite diced tomatoes
1 28 oz can crushed tomatoes
1 16 oz can chick peas
1 c chopped onions
1 chopped red bell pepper
1 chopped green bell pepper
2 chopped celery stalks (large)
1 1/4 c dry lentils
3 cloves minced garlic (or more to taste)
1 1/2 tsp ginger powder
1 1/2 tsp curry powder
1 1/2 tsp ground cumin
1/8-1/4 tsp cayenne pepper (to taste)
Directions
Place all ingredients in a covered cooking pot and place on the stovetop. Cook on high until mixture comes to a boil, then reduce heat to low or medium low and let simmer for about 45 minutes. Alternatively, mix all ingredients in a slow cooker and cook on low for 6-8 hours or until the lentils are soft and the vegetables are tender.
Serve as is or over a bed of rice.
