Introduction

This is one of my favorite go-to recipes when I need to make up a batch of salad in anticipation of a few busy days ahead. This keeps for 2-3 days in the fridge. Ingredients

    1.5 cups diced turkey
    2.5 cups finely shredded cabbage
    .25 cups diced green onion, tops included (2 green onions)
    1 tablespoon Dijon mustard
    .25 cup low-fat Greek yogurt
    salt and pepper to taste
    Optional: garlic and/or sage to taste

Directions

Mix all ingredients together. Serve as is or to really fill you up, scoop turkey salad into lettuce leaves and enjoy a plate full of bunny-style burritos.
