3 Eggs
1/2 C Cheddar Cheese
1/2 C Skim Milk
1 C Ham Dices (diced small)
Flour (not in the calculated ingredients)
2 Tbsp Butter, salted
1/2 Green Pepper (diced)
1/2 Yellow Onion (diced)
3 C Hash Browns
Directions
Preheat oven to 350. Spray 9 inch, round dish with cooking spray. Cook hash browns in one Tbsp of butter until they have started to brown up. Put them in your greased dish, and push them down so they completely cover the bottom and go somewhat up the sides of your dish, like a crust. Saute green peppers and onions in one Tbsp of butter. Sprinkle with a large pinch of flour. Whisk eggs and milk together, then add ham dices. Pour egg/milk/ham mix into pepper & onion mixture and combine. Pour into hash brown crust. Bake at 350 for 25 minutes. Sprinkle with cheese. Bake 5 more minutes.
