Introduction

It's a thin week - we have several kinds of vegetables in the house but not much in the way of meat. This is my attempt at a vegetarian dinner with what we have in the house. Ingredients

    4 medium raw potatoes, chopped
    2 cups fresh broccoli, chopped
    1 cup raw carrots , chopped
    1 large onions, chopped
    .25 cup olive oil
    2 tbsp garlic powder,
    Salt and pepper to taste

Directions

Heat oil to medium-high in a large skillet, add onions and garlic powder. Cook, stirring frequently, until onions are translucent. Add chopped carrots, broccoli stems, and potatoes, stir to thoroughly coat. Cook, stirring as sparingly as possible, until potatoes are softened and browning. Stir in broccoli florets and cook, covered, approximately five minutes until florets are crisp tender. Add salt and pepper to taste and serve.
