Ingredients

    1 cup uncooked bulgur wheat
    1 cup boiling water
    2 tomatoes, chopped
    4 green onions, chopped
    1 can black beans, rinsed and drained
    1 small can no-salt added corn, drained
    1/2 teaspoon grated lime rind
    1/4 cup fresh lime juice
    2 tablespoons olive oil
    1/2 teaspoon ground cumin
    1/2 teaspoon red pepper
    1/4 teaspoon salt

Directions

Place bulgur in a large bowl, ad 1 cup boiling water. Cover and let stand 30 minutes.

Add chopped tomato and remaining ingredients to bulgur. Toss gently. Chill up to 8 hours.
