This is so good for either breakfast or a brunch. This is so good for either breakfast or a brunch.
Number of Servings: 8


    4 cups Zucchini
    1 cup mushrooms
    1 cup onions
    1/4 tsp basil
    1/4 tsp oregano
    1/4 tsp garlic powder
    1/4 tsp parsley
    1/2 tsp salt
    1/2 tsp pepper
    2 cups mozzarella cheese
    2 eggs (well beaten)
    1 pkg crescent rolls(or whatever crust you prefer)


Cook zucchini and onion and mushrooms in 1/2 cup margarine( I use 2 tbsp coconut oil) about 10 minutes or until soft.Add basil, oregano, garlic powder, salt, parsley and pepper. Mix cheese and eggs together. Add mixture.Use crescent rolls to form crust(or whatever you use).Brush crust with mustard and add zucchini mixture.Cook at 375 degrees for 20 minutes.Remove and let sit for 10 minutes.Serves 8 large slices
