Good Veggie soup. Eliminate sour cream and cheese if you want just vegetarian. Good Veggie soup. Eliminate sour cream and cheese if you want just vegetarian.
Number of Servings: 6


    6 cups Water
    3 tbsp Fat Free Sour Cream
    1 ounce Sharp Cheddar Cheese
    1 large raw Potato, peeled
    0.75 raw Onion, chopped
    1 large stalk Celery
    1 cup cooked, frozen Mixed Vegetables
    0.33 cup Rice, white, dry, medium grain
    1 ounce noodles (Ronzoni, Smart Taste, Dry, Enriched, No yolk


Put water in large pot. Chop raw vegetables into bite size pieces or smaller. Place in water and bring to rolling boil. Turn heat down to simmer. Add rice and noodles. Check to see if vegetables are crispy, then add cooked Mixed vegetables, sour cream and cheddar cheese. Stir until blended and serve.
Season to taste (added salt not figured in recipe).

Serving Size: Makes 7, 1 cup servings
