Ingredients

    1 clove of garlic, mashed/minced fine
    Half tsp salt
    1 tsp freshly ground pepper
    4 TBS of fresh lemon juice
    5 TBS Mayo
    3 tsp dijon mustard
    1.5 tsp anchovy paste (or to taste)
    6 TBS parmesan cheese (grated on a zester works best)

Directions

Add to a jar:
Garlic, salt, pepper, lemon juice, mayo, dijon mustard, and anchovy. Cover with tight fitting lid, shake well to combine. Open lid and carefully add in parm cheese, whisking with a fork to combine. Dressing will be very thick.

You can thin this out with a little water or milk to help it coat lettuce well without using as much mass.

Gets better with a few hours in the fridge.

Serving Size: Makes 1 cup, (eight 2-TBS servings)
