Introduction
This is 2 servings of pumpkin pie that you can mix up and cook in the microwave, then chill an eat! I use a large mug to cook my mini pies in. Ingredients
Canned pumpkin, 1 cup
Pumpkin Pie spice, 1 tbsp
Evaporated Milk, nonfat, 3.5 fl oz
Egg Beaters, 2.5 tbsp
Vanilla extract, 1.5 tbsp
Heart Smart Bisquick (mix only), 0.25 cup
Stevia, 3 tbsp or to taste
Directions
Mix the evaporated milk and bisquick into a slurry in a medium sized bowl. Gradually add the egg beaters and vanilla. When the bisquick is fully combined, mix in the rest of the ingredients, and pour the mixture into 2 large mugs. Microwave them for 10-15 minutes, then chill for at least an hour. Enjoy!
If you want to extract the pumpkin pie from the mug prior to eating, spray the mug with cooking spray before you add the pumpkin mixture.
The original recipe calls for 1/2 a cup of sugar in place of the stevia, but I think the stevia is just as good.
Experiment with cooking times and power settings for your microwave. At my mom's house, I have to take the mug out at 5 minutes and stir everything together, or the middle won't congeal properly and the edges will be crusty, but my microwave doesn't have that problem.
