Ingredients

    1 8-oz package tempeh
    1/2 small can water chestnuts
    2 bunches bok choy, sliced
    1-1/2 cups broccoli, in florets
    1 small green pepper in strips
    1 medium red onion in strips
    2 small carrots, sliced
    3 tbsp soy ginger sauce, diluted with 3/4 cup water

Directions

Stir fry all ingredients on high heat in a wok with non-stick spray.
Add diluted sauce and let steam on high heat until everything is crunch-tender.
Serve with brown rice.

    tempeh is firmer then tofu it holds up better when cooking and is good if u have a texture issue with tofu is meatier has more of a meat chew to it - 5/12/09
