Introduction

Number of Servings: 2

Ingredients

    Whole Grain Rotini (1 cup dried)
    Salmon (pick your favorite) (6oz)
    Arugula (1 cup)
    Whole Tomato (medium size)
    Lime Juice (1/4 cup with pasta, 1 TBs with salmon)
    Lemon Juice (1/4 cup with pasta, 1 TBs with salmon)

Directions

1. Defrost salmon. Boil water for pasta. Dice tomato.
2. Start cooking salmon in nonstick pan as water boils
3. When water is boiling, pour in 1 cup of pasta and cook until tender
4. As salmon is cooking, tear it apart then add 1 tbs of lemon juice and 1 tbs of lime juice
5. When pasta is tender, drain then return to pot
6. To the pasta add diced tomatoes, 1 cup arugula and 1/4 cup lemon juice, 1/4 cup lime juice and keep on medium heat
7. Stir and let juice simmer
8. When salmon is done cooking, add to pot with pasta
9. Stir until arugula has shrunk down
10. Fill up your plate and enjoy!
