Ingredients

    1 T. olive oil
    1 large onion, diced
    2 carrots, diced
    2 stalks celery, diced
    1 russet potato, scrubbed with skin on
    1 package lean turkey sausage
    large (26.5 oz) can black beans
    28 oz, can diced tomatoes
    14 oz. can fire-roasted tomatoes
    3 cups fat-free chicken stock
    cumin
    curry powder
    black pepper

Directions

Saute all veggies and sausage in oil with cumin and curry powder, black pepper to taste. Mix in beans, tomatoes, and broth. Bring almost to a boil, lower and simmer at least 30-45 minutes, or as long as you like. Makes a LOT! Yum.
