3/4 cup Egg Beaters
1 wedge Laughing Cow light spreadable cheese - I like the queso fresco and chipotle kind
2 strips Morningstar Farms Vegetarian Bacon
1 basil leaf, chopped
1 tsp rosemary
Salt, pepper, and garlic powder to taste
Optional: 1 tsp sauce such as BBQ, Sriracha Chili Sauce, or salsa
Directions
Pour the liquid Egg Beaters into a microwave-safe bowl. Using a butter knife, break the cheese into smaller chunks and drop into the eggs. Break the bacon strips into smaller bits and drop into the egg mixture. Add all other ingredients and mix with a fork until incorporated.
Cover bowl with a paper towel. Microwave for 30 seconds. Break up with a fork. Microwave for an additional 20 seconds. Break up with a fork. If eggs still have some liquid in them, continue microwaving in increments of 20 seconds, breaking up eggs with a fork after each time, until eggs are thoroughly cooked. Enjoy! Would be good with light wheat toast.
