Slightly crispy on the outside, soft on the inside, and packed with flavor! My family doesn't even care for oatmeal cookies and they gobble these up. Ingredients

    2 TBSP stick margarine, melted
    1/3 c. unsweetened applesauce
    1/2 c. granulated Splenda
    1/4 c. Splenda brown sugar blend
    1 egg white, or 3 TBSP liquid egg white
    1 tsp. vanilla extract
    3/4 c. whole wheat flour
    1 tsp. baking soda
    1/2 tsp. cinnamon
    1/8 tsp. nutmeg
    1/4 tsp. salt
    1 1/2 c. quick cooking oats
    1/2 c. raisins

Directions

Preheat oven to 350° F. In a large bowl, combine margarine, applesauce, Splenda, and Splenda brown sugar blend, and mix thorougly. In a smaller bowl, use a fork to combine the flour, baking soda, salt, cinnamon, and nutmeg. Pour this into the larger bowl and mix well. Add the oats and then the raisins, stirring the mixture thoroughly after each addition. Drop by spoonfuls onto a cookie sheet sprayed with cooking spray or lined with parchment paper, and flatten them slightly --- these cookies don't spread. Bake for 11-12 minutes at 350. I made these fairly small (I used a half dollar in the picture for scale) and got 32 cookies. You could make 24 larger cookies and they'd still only be 60 calories each.
