Delicious, low on calories and high in protein. A family favorite!I find that using frozen chicken breasts keeps them moist and makes it more convenient so you can still make this meal even if you forgot to thaw something for dinner! Ingredients

1 pound of boneless, skinless chicken breast (I use frozen)
Garlic Powder
Salt & Pepper (to taste)
3 Tblsp olive oil
3 cloves garlic, finely chopped
2 cups fresh sliced mushrooms
1 Tblsp parsley flakes
1 cup marsala wine
Directions
Preheat oven to 400 degrees Farenheit. Place frozen chicken breasts in baking dish and sprinkle with garlic powder, salt and pepper. Place in oven for 20 minutes. Turn breasts and sprinkle with more garlic powder, salt and pepper. Return to oven for another 15 minutes.
After turning breasts, start olive oil in heavy large skillet over medium high heat. Add chopped garlic cloves to olive oil and heat for a minute or two, then add in the sliced mushrooms and parsley. Cook mushrooms and garlic until mushrooms start to soften. Add wine and let simmer until chicken is ready to come out of oven. Add chicken to skillet and cook for another 5-10 minutes, or until chicken is cooked thouroughly. Serve over pasta if desired.

I miss chicken marsala as it is my favorite "restaurant food." This low cal recipe satisfied my craving. The only thing I felt was missing was about 1/4 chopped onion so I added it in when sauteing the garlic and mushrooms (add 4 calories). Only used 1/2 cup wine. Tasted great! Chicken falls apart - 7/16/13
