Number of Servings: 4

Ingredients

    Garbanzo Beans, 1 can
    Hearts of Palm, 1 can
    Olive Oil, 4 tsp
    Calamata Olives, 8
    Green Olives, 8
    Cider Vinegar, 4 tsp
    Iceberg Lettuce , 1 cup, chopped

Directions

Drain and rinse garbanzos and hearts of palm. If necessary, chop hearts of palm into small pieces.

Mix olive oil and vinegar together. Add salt & pepper to taste.

Mix dressing, olives, hearts of palm and garbanzos together. Let sit 30 minutes.

Mix salad with chopped iceberg lettuce just prior to serving.

Makes 4 1-cup servings.

    This looks like an interesting combination. I like garbanzo beans, so will try it. I've not used Hearts of Palm. It will be a new experience for me. When I make this salad I will substitute HEALTHY Romaine lettuce oR Baby Spinach leaves for the UNHEALTHY ICEBERG LETTUCE. - 7/16/11
