Ingredients

1 Jar Trader Joe's Curry Simmer Sauce
1 sweet potato
1 orange bell pepper
1.5 cups sliced baby bella mushrooms
4 Tablespoons Extra Virgin Olive Oil
Directions
Heat a skillet and add oil. Thinly slice your sweet potato. I like to cut it horizontally into circles and then quarter those. When the pan is hot, add the sweet potato and let it cook for about 7 minutes and then flip.
While that is cooking, slice up your bell pepper- don't forget to remove the seeds! Slice it in any way you please- when the sweet potato feels soft, throw in the pepper. I like to get a nice char on mine, but if you like it more crunchy you can add the peppers and mushrooms at the same time.
When the mushrooms have released the liquid, add in the jar of the Trader Joe's Curry Sauce. I also added 1 cup of water to thin out the sauce a bit. Let it simmer on medium-low heat for about another 15 minutes. Remove and serve either on its own or with bread/over rice!
