Introduction

Taco Bell used to offer a seafood salad. Here's my low fat version. Sodium level is high, but calculated nutrition info reflects much higher sodium than actual. Number of Servings: 4

Ingredients

    8 oz imitation crab meat
    3 c iceberg lettuce (or bagged lettuce, carrots, etc are fine)
    1 med. cucumber, peeled, seeded and chopped
    1/2 c Sargento reduced fat sharp cheddar, shredded
    3-4 tblsp sliced black olives
    1 med tomato, chopped
    2 green onions, sliced, white part only
    4 tbsp Low fat or fat free ranch dressing (more on the side)

Directions

Cut up crab meat into small bit size pieces, process veggies as noted. Place everything in a bowl and toss. I like to serve with a whole wheat dinner roll.
