Introduction

Delicious low fat/low calorie soup that's chock full of flavor. Perfect to eat as a first course to help fill-up and get in some veggies. Ingredients

    EVOO
    Carrots, chopped
    Celery, chopped
    Onion, chopped
    Cabbage, chopped
    Zucchini, chopped,
    Bell Pepper, chopped,
    Garlic, minced
    Cut Green Beans
    Dry Onion Soup Mix
    Diced Fire Roasted Tomatoes
    Tomato Juice
    Vegetable or Chicken Stock

Directions

Chop all vegetables. Saute carrots, celery, onion and cabbage in evoo for 5 minutes. Add everything else to the pot and let simmer about 20 minutes until everything is tender but still firm with a little crunch.
