    1 tbsp olive oil
    3 medium onions, chopped
    3 tbsp minced garlic
    2 tbsp italian seasoning
    1 tbsp black pepper
    24 oz bistro sensations chicken sausage (I used 4 links of habenero and 4 links of roasted peppers sausage), cut into bite size pieces
    2 bottles of V8 vegetable juice
    8 cups 99% fat free chicken broth
    16 oz fresh baby spinach
    40 oz Buitoni 3 cheese tortellini


Saute onions and garlic in olive oil. When onions are tender, add italian seasoning, pepper, and chicken sausage. Cook until heated through. Add V8 and chicken broth. Bring to a boil. Add spinach, cook for 10 minutes. Add tortellini and cook for an additional 8 minutes.

I make a bunch and freeze half of it for later. You can easily cut the recipe in half.
