Ingredients
-
3-4 lb pork roast
2 onions
BBQ sauce of choice (Sweet Baby Rays Sweet & Spicy)
1 cup ginger ale
2 tsp liquid smoke
Directions
1. Turn crock pot to Low setting.
2. Coarsely chop the onions and use a little more than half to cover the bottom.
3. Place the roast on top of the onions and cover with the remainder.
4. Measure out the ginger ale and add the liquid smoke to the mixture.
5. Pour the mixture over the meat and let cook for 8-9 hours.
Remove the meat/onion mixture, remove bones, and shred with forks.
6. Drain most of the liquid, but save some for reserve to keep the pork moist. (It will develop more liquid as it cooks, so be careful not to add too much.)
7. Place meat and desired amount of onions and liquid back in the pot.
8. Stir in the desired amount of bbq sauce and cook for an additional 2 hours.
9. Serve with buns.
Serving Size: makes approximately 16 sandwiches, depending on preference
Number of Servings: 16
