Introduction
This recipe is a favorite in my picky house and it is veryversitile. My husband hates squash so I put the stuffing into green peppers for him. I also make more of the stuffing mix than necessary because I love to use it as a sidedish or lunch by adding black beans or tomatoes to it. Ingredients

3 Acorn squash, cut in half and seeds removed
1 1/2 cups cooked brown rice
1 cup cooked ground sausage (I use Whole Foods fresh breakfast sausage)
1 cup cooked cut broccoli
cooking spray
Directions
1. Preheat oven to 375*.
2. Lightly coat a large baking sheet with cooking spray. Cut squash in half horizontally. Scoop out and discard seeds. Place the squash cut-side down on the prepared baking sheet. Bake until tender, about 45 minutes.
3. Mix together brown rice, ground sausage and broccoli and then fill the squash halves with the stuffing mix.
4. Reduce heat to 325* and bake squash halves with stuffing mix for about another 8-10 minutes.
Serving Size: Fills 6 acorn squash halves and enough for leftovers
