Introduction
A great, creamy version of Macaroni and Cheese made with canellini beans and tomatoes. Easy to prep using the microwave and a blender before being popped into the oven for a homey touch! Ingredients

2 onions, diced
2 to 3 lbs. tomatoes, chopped
1 lb. whole wheat macaroni
3 ½ cups cooked, drained cannellini beans
1 cup nutritional yeast
½ cup lemon juice
1 tbsp chili powder
1 tsp garlic powder
Directions
Preheat oven to 350 degrees F.
Place onions in a large, microwave-safe covered baking dish.
Cover and cook 5 minutes on High.
Add tomatoes to onions.
Cover the baking dish and cook 3 minutes.
Cook pasta until very al dente.
Add the beans, nutritional yeast, lemon juice, chili powder and garlic to a blender.
Cover and run the blender at high speed until the ingredients are creamy. Combine the cooked and drained pasta and the bean sauce with the onions and tomatoes in the covered dish, and mix well.
Cover and bake for about 10-15 minutes.
