Ingredients
-
16 ounces Apple Cinnamon Cobblestone Bread
3 large eggs
1 cup skim milk
Grated zest of 1 orange
½ cup fresh orange juice
1 Tbs. Cointreau or other orange liqueur (optional)
3 Tbs. Demerara Sugar (a pale to golden yellow sugar which is not only healthy but also very appetizing & appealing. The color of demerara varies between 2000 - 8000 ICUMSA. Its crunchy texture & pure & natural shining crystals make a healthful substitute for ordinary table sugar.)
¼ tsp. ground cinnamon
¼ tsp. freshly grated nutmeg or to taste
Softened unsalted butter for brushing
Confectioners’ sugar for dusting
Warm maple syrup for serving. Not included in NUTRITIONAL INFO.
Directions
1. Cut the bread into each 8 thick slices.
2. In a bowl, whisk the eggs until just blended, then whisk in the milk, orange zest, orange juice, Cointreau, granulated sugar, cinnamon and nutmeg. Pour the egg mixture into a large, shallow bowl (you may need 2 bowls) and add the bread slices. Soak; turning once, about 10 seconds per side.
3. Pre-heat an oven to 400°F and brush a casserole dish with butter. Arrange the soaked bread slices in the dish. Bake for 10 minutes. Turn the slices over again and bake for 10 minutes or to your taste.
4. Dust the French toast with confectioners’ sugar. Serve immediately with maple syrup.
