Ingredients

2 large or 3 medium apples
1 cup sugar
5 oz (125g) butter (melted)
1 egg
1.5 cups white flour
1 teaspoon cinnamon
1 teaspoon mixed spice
0.5 teaspoon nutmeg
1 teaspoon baking soda
0.5 teaspoon salt
1 cup raisins or sultanas
Directions
Preheat oven to 180 deg C/350 deg F
Peel, slice and chop apples into medium chunks and place in a large mixing bowl.
Pour sugar over apples and then pour melted butter over that and mix well.
Beat the egg lightly in a small bowl or cup and add to the apple mixture - mix well again.
Sift together the dry ingredients and add to the apples and then also add the sultanas - mix again.
Pour into a sponge roll tin that has been lined with baking paper and spread out as evenly as possible.
Bake at 350 deg F/180 deg C for 40 minutes (30 minutes fan bake)
Cut into squares (between 12-20) Calories calc for 20.
Can be served warm with cream or custard as a desert or colled and dusted with icing sugar for afternoon tea.
