Ingredients

* 10 Medium-sized Potatoes (2-1/4" to 3-1/4" dia. each) [10 potatoes is approximate. When we last made this, we had about 10 cups / 1,750g mashed.]
* 1 cup Sour Cream (full fat)
* 250g Cream Cheese (full fat), softened [One whole 8-oz. pkg.]
* 1 tsp. Garlic Powder
* Salt and Pepper (fresh ground, if available!), to taste [NOT included in nutritional information!]
* 50g Parmesan Cheese, shredded / grated
Directions
1. Cook and mash potatoes.
2. Beat cream cheese, sour cream, garlic powder, salt, and pepper with potatoes until smooth.
3. Spoon into 10-cup (8" x 11.5" x 2" / 2 quart) baking dish (lightly greased if desired, but not necessary), and refrigerate for a few hours (or overnight if desired).
4. Take out 1/2 hour before cooking and let sit at room temperature.
5. Cover with foil and bake in pre-heated 350 F oven for 30 minutes, or until potatoes are heated through.
6. Remove foil, sprinkle with parmesan cheese, and bake an additional 5 minutes or so, or until brown. (If desired, you may place under the broiler for a minute or two to brown the cheese further. Watch that it does not burn!)
7. Makes 10 servings (cut once down the middle, length-wise, and four times width-wise). Enjoy! :)
