Introduction

Ingredients

1 C Quaker Oatmeal Pancake Mix (dry mix)
2 Large Egg Whites
1 C Skim Milk
1/2 Tsp Ground Cinnamon
1/4 C Blueberries (fresh or frozen(thawed))
1 Tbsp Smart Balance Light Buttery Spread with Flax Oil
Canola Cooking Spray
***Can add or substitute additional mix-ins. Cocoa powder, pureed banana, pumpkin puree, applesauce, vanilla or almond extract, peanut butter, ground flax, nuts, other berries, or chocolate chips may be used. Add or subtract 1-2 Tbsp of milk to compensate if using additional wet or dry mix-ins.
Directions
Mix all ingredients in a medium mixing bowl with a whisk, stirring just until lumps are gone. Allow to sit for 2-3 min to thicken.
While waiting, heat nonstick skillet on medium-low.
Coat lightly with spray when heated and pour about 1/4 cup of mix onto skillet for each pancake. Allow to cook until bubbles are showing through top side (2-3 minutes), and flip. Cook for additional 2 minutes on the other side. Repeat for remaining batter.
Serve with Buttery Spread and Maple Syrup, Honey, or Agave.
***Because real grade A maple syrup is so high in calories, I mix 2 Tbsp of syrup with one Tbsp of hot water (& sometimes the butter spread also) to gain more liquid for less calories. Because the flavor is so strong, the water doesn't affect the flavor, just the thick consistency.
