Ingredients

    1 cup cooked whole grain penne pasta (such as Barilla)
    1 cup canned black beans (such as no salt added Kuner's)
    2 tsp garlic
    cooking spray
    1 cup cubed raw sweet potato
    1 cup chopped broccoli
    2 celery stalks, chopped
    2 medium carrots, chopped
    2 medium tomatoes, chopped
    2 scallions (green onions), chopped
    1/2 cup part-skim shredded mozzarella cheese
    4 tbsp light balsamic vinaigrette dressing

Directions

Coat a pan with cooking spray and heat over medium-high heat. Cook sweet potato about five minutes. Add broccoli and garlic; cook for another two minutes. Add celery, carrots, and scallions; cook another two minutes. Add tomatoes, pasta, and balsamic dressing and cook one minute more. Stir in cheese until melted. Serve immediately.
